If you remember from my 25 random facts about me post i said i dont eat cheese excpet for cheddar cheese.
Anyhow i am a very picky when it comes to food i have a whole list of things i dont eat lol and would always refuse anything that had any cheese in it, including cheese cake.
However this cheese cake is different its the first cheese cake i ever taste so i can compare it with anything.
Believe me when i tell you its DELICIOUS!!

Cheese cake recipe
For the base:
250gms digestive biscuits, crushed
125 gms of butter, soft
For the filling:
225 gms caster sugar
3 tablespoons cornflour
700 gms Philadelphia cream cheese
1 teaspoon vanilla essence
250 ml whipping cream (Al Marai)
One can 595 gms (21 oz) Blueberry pie filling-
(I used American garden which you can buy from Al Fair and Lulu)
Melt the butter and add crushed digestive biscuits. Mix well
Line a 23 cms spring-clip cake tin with baking paper and butter the sides of the tin. Press the crushed biscuit mix over the base of the tin, using a spoon.
To make the filling, mix together sugar and cornflour. Beat in the cream cheese until smooth, then add the two eggs and vanilla essence. Beat until smooth.
Slowly whisk in the whipping cream until the mixture thickens slightly.
Pour the cheese mixture over the biscuit base.
Bake in a pre-heated oven at 180 degrees (Gas mark 4) for one hour.
When cake has cooled down, spread the blueberry filling on top and refrigerate.
