This was our lunch on saturday, my brother caught the lobsters on his fishing trip over the weekend and mum found a recipe from one of her cookbooks, after hearing rave reviews about how tasty it was i used the recipe for yesterday’s lunch, it was delicious.
It is a very easy recipe and so tasty, you should try it.
LOBSTER IN THE OVEN
First of all, wash the lobster and pat it dry. Then weigh it.
Cooking time depends on the weigh, 15 minutes per pound (about 450 grms) in a very hot oven (240 degrees)
Preheat the oven.
In order for the lobster to lay flat, place a skewer through its entire body, inserting it first at the tail end and pushing it right through to the ribcage.
Place the lobster in a dish, and drizzle with a little olive oil.
Put it in the oven., and set the timer.
In the meantime, prepare the garlic butter. Butter should be at room temperature, soften it with a spoon, then add pressed garlic, mix well, then add chopped parsley.
Take lobster out of the oven, and place it on a chopping board. Put it on its back, and hold it with a tea towel. Cut it length-way with a sharp knife , from the ribcage to the tip of the tail, you may have to use kitchen scissors to cut through the shell.
Remove the orange and brown bits from the cavity, as well as the tube that runs from the stomach to the tail.
Place the halves of the lobster in an oven proof dish, and spread the garlic butter on the white meat. Put it under the grill for 5 minutes.
